Homemade Banana Pudding



As children in the early 1960s, we enjoyed our mother’s banana pudding made with vanilla wafers and topped with meringue. It was a special weekend treat that also found its way to each annual family reunion held outside at a local state park.


BANANA PUDDING


Ingredients: Large package vanilla pudding & pie filling mix, 3 beaten egg yolks, 3 ½ cups milk, box of vanilla wafers, 2 large bananas sliced, 3 egg whites, 1/3 cup sugar, pinch of salt.


Directions:

Mix pudding, egg yolks, and milk in saucepan. Bring to a full boil over medium heat, stirring fairly constantly, and then remove from heat and let cool for 15 minutes. Place in refrigerator to chill for at least an hour. Beat with egg beater or low speed on mixer until smooth. In 2 quart baking dish, place layer of vanilla wafers. Cover with layer of banana slices. Spread a layer of pudding. Use this same sequence to make several layers, but finish with the pudding on top.


Meringue: Beat egg whites and salt until foamy. Add sugar one tablespoon at a time, beating after each tablespoon. Continue beating until mixture forms stiff peaks. Pile meringue onto the pudding. Bake at 425 degrees for 5 – 10 minutes until meringue is a delicate brown. Delicious warm or chilled.
